Stock
Roast the carcass and other parts of meat
450 degree
Rotate half way for a total of 45 min
Fill with water to a simmer remove scum
Roughly chop celery, carrot, garlic, onion
Sheet tray with some tomato paste
Oven to 375 and place in
Roast till caramelized
Add to stock
Add thyme sage rosemary bay leaf pepper corn
Simmer for 12 hrs
Ladle strain
