Dashi

  • Bonito Flakes

Soak the Kombu in water for 30 minutes - 1 hour. After the soak, place the pot of Kombu and water on medium heat and bring to a simmer. It is important that you do not bring to a boil and over seep the Kombu as you can bring out the bitterness of the seaweed into the broth. Once at a simmer (small bubbles), turn off the heat and remove the Kombu. Do not discard it as you can use it again for future Dashi.

Add the Bonito Flakes into the pot of water. Wait till the Bonito Flakes reach the bottom of the pot and then filter everything out with a cheese cloth.
